A Unique Anaerobic Fermented Coffee from Alta Mogianas, Brazil
In 2024, Uncommon began its partnership with Jean Faleiros, a 3rd generation coffee farmer who was born with a passion for coffee growing. Jean’s coffee is a microlot of the Catuai varietal from his El Dorado farm in Alta Mogiana, Brazil. He starts with balanced and sustainable soil and fertilizes with Organomineral. All of the farm’s coffee waste goes back to the farm in the form of compost.
This coffee underwent an anaerobic fermentation for 90 hours after being inoculated with intenso yeast. The yeast is added to control fermentation and crowd out undesirable microorganisms in the fermentation process. Oxygen is also removed from the fermentation process to ensure that only microorganisms that survive without it can thrive and add to the fermentation process.
Its anaerobic fermentation gives it a unique, wine-like finish.
